How it Started

On a vibrant Cinco de Mayo, amidst the hustle and bustle of Union Boulevard and Vickers Drive, Jose Santos Colmenares Jr. and his beloved wife, Cindy, along with their two lovable canine companions, Luna and Frida unfurled the colorful banners of Moctezuma Mexican Grill food truck.

Hailing from the sun-kissed lands of California, Jose's journey led him to the heart of Colorado Springs in 2014, where he found himself stationed at Fort Carson, amidst towering mountains and endless skies. As his Army tour drew to a close, Jose's dreams took flight, intertwining with Cindy's aspirations, as they embarked on the grand adventure of realizing their dream: the birth of their very own restaurant.

We have always had the desire to start our own restaurant but until now, it seemed like a farfetched dream,” Jose said. “This food truck is our first step towards building a better future for our family he says. The last hurdle along the way: “I had zero cooking experience,” he jokes.

Seeking guidance and inspiration, he sought the wisdom of a seasoned chef friend in Guadalajara. Under their mentorship, Jose honed his culinary skills, experimenting with various recipes through a series of trials and errors. Embracing a philosophy of minimizing waste, instilled by his mentor, Jose learned to repurpose ingredients creatively; for instance, utilizing trimmings from tri-tip to enhance other meats and employing the residual flavors to elevate the overall taste profile.

As he delved deeper into the art of cross-utilization, Jose discovered the profound impact it had on enhancing the flavors of his dishes. Through dedication and perseverance, Jose proved himself a diligent pupil, a fact evident in the diverse array of offerings on his menu, ranging from tantalizing tacos to hearty burritos, flavorful tortas, satisfying bowls, indulgent quesadillas, and crispy nachos and fries, each brimming with optional meat or vegetarian fillings and toppings.
